Ingredients:
4 lbs boneless, skinless chicken thighs, trimmed of all visible fat
4 lbs boneless, skinless chicken breasts, trimmed of all visible fat
2 large sweet onions (Maui onion, Vidalia etc), cut into slices about ¼ inch thick
3 cups +/- barbeque sauce, divided
Method:
Put onion slices in bottom of slow cooker.
Layer chicken and 1 ½ cups sauce ending with sauce
Cook on high for 1 hour and low for 6 hours.
Remove chicken and onions; allow to cool. Discard liquid in slow cooker.
Using 2 forks, shred chicken and mix in with onions.
Mix chicken, onions and up to 1 ½ cups warmed remaining barbeque sauce, until you get to the consistency you like. Return to slow cooker on "warm" cycle for serving.
Serve with whole grain buns and additional barbeque sauce on the side.
