Recipe for Cumin Cauliflower Casserole with Cheesy Tostitos Topping

Makes 6-8 servings each approximately 116 calories, 4.4 grams fat, 10.2 grams carbs, 2.4 grams fiber, 9.5 grams protein; 3 WW Points+

1 large cauliflower, trimmed into florets
1 ½  cup 4 cheese Mexican blend, 2 %, cheese, divided
1 cup crushed Roasted Garlic Black Bean Tortilla Chips
2 TBSP plain non-fat Greek yogurt
1 tsp roasted ground cumin (I just picked this up recently, nice flavor!)
2 TBSP chopped cilantro plus more for serving
Salt and pepper

Cook cauliflower in salted water until soft, about 20 minutes.  Preheat oven to 400 degrees.
Mash cauli and combine with ¾ cup cheese, yogurt, cumin, and 2 TBSP cilantro.  Put in a casserole dish.  Combine remainder of cheese and chips.  Top casserole with chip/cheese mixture.  Bake for  20 minutes or until cheese is melted and browning.
