Chicken, Corn with Chiles, and Mushroom Quesadillas

Shred chicken and warm briefly in microwave-just to get chill off.
Warm corn briefly in microwave-just to get chill off.
Slice mushrooms thinly.
Warm non-stick saucepan over med-high heat.
Spray one side of tortilla with cooking spray and place in pan.
Immediately add shredded cheese, leaving a small rim around the tortilla.
Add other toppings, a squirt of fresh lime juice, ending with another layer of shredded cheese.
Place another tortilla on the top.
Cook until cheese is melting and tortilla is browned.
Spray the top tortilla with cooking spray.
Carefully turn over and cook until browned.
Remove from heat, cut into quarters and top with your choice of accompaniments (NFGY or sour cream, taco sauce, salsa, avocado, guacamole…
