Recipe for Lightened Up Thanksgiving Parfaits

289 calories, 6 grams fat, 52grams carbs , 11 grams protein

1 cup graham cracker crumbs
8 oz. cream cheese (I used fat free)
1/3 cup brown sugar
1 teaspoon vanilla extract
15 ounces pumpkin puree (1 can)
2  teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
Pecans or other nut for topping
Light whipped topping

In a food processor mix the cream cheese, sugar, and vanilla until smooth. Add the remaining ingredients except pecans and whipped topping and process until smooth.

Place half of the graham cracker crumbs into four glass dishes or bowls. Top with layers of the cheesecake mixture, whipped topping, graham cracker crumbs, cheesecake mixture and ending with whipped topping.  Top with a few pecans.
