Overnight Oatmeal

Makes 3 filling servings, each with approximately 300 calories, 14 grams fat,  32 grams carbs, 13 grams protein without toppings.

1 cup old fashioned rolled oats (not instant)
½ cup plain, non-fat Greek yogurt
½ cup light vanilla soy milk
½ cup chopped walnuts
¾  tsp vanilla
1 ½  tsp cinnamon
1 TBSP honey

Optional toppings: chopped nuts, chopped dried fruit, more cinnamon, maple syrup or brown sugar. 

Combine and stir well.  Cover and refrigerate overnight.  Serve warm or cold.
