Makes 3 servings, each with approximately 100 calories, 3 grams fat, 8 grams carbs, 5 grams protein
Ingredients:
1 tsp olive oil
¼ cup shallots, finely chopped
1 small clove garlic, finely chopped
¾ cup 1% milk
1 TBSP grated parmesan cheese
Few grinds of black pepper
2 TBSP Alouette light garlic and herb cheese
10 oz box frozen chopped spinach, defrosted and wrung dry
Method:
Warm olive oil in non-stick sauté pan. Add shallots and garlic and cook over medium for about 5 minutes or until translucent. Add milk, parmesan and pepper (note, I didn’t add any extra salt as the Alouette provides enough for our taste). Add Alouette and continue stirring. Add spinach and stir to mix into sauce. Cook another minute or two until warmed through and serve.
