Fruit from 1 ripe mango, cubed (about 1 1/2 cups)
1/4 cup finely diced red onion
1 TBSP rice vinegar
2 TBSP chopped parsley, cilantro or mint
1/2 TBSP fresh lime or lemon juice
Salt to taste
Optional: 1/2 cup diced avocado
Mix all ingredients together. Chill and serve.
